Ingredients
Chew's Cage-Free Eggs x 8
Heavy cream, 1/4 cup
Unsalted butter, 3 tbsp
Olive oil, 1 tbsp
Parsley / chives / dill, 2 tbsp
Sea salt + black pepper, to taste
Accompaniments (optional)
5 cherry tomatoes, diced
1 yellow bell pepper, diced
1/4 yellow onion, diced
Method
1. In a bowl, whisk together the eggs and cream. Set aside.
2. In a non-stick pan, heat the olive oil on medium heat. Fry the tomatoes, bell peppers and onions together with any additional accompaniments.
3. Once cooked, set the ingredients aside on another plate. To the pan, add the butter and warm over low heat.
4. Add the egg mixture and using a silicone spatula, gently stir the eggs over low heat.
5. Stir by gently scraping the sides of the pan and pushing the eggs towards the centre. Repeat till soft curds are formed.
6. Season with salt and pepper to taste, continue stirring till it reaches a consistency you like.
7. Take the eggs off the heat and stir in the cooked ingredients.
8. Serve in a warm skillet and sprinkle with your choice of herbs.
